#Lockdown – What’s for brêkvis?

Brekkies is the most important meal of the day! That is what the experts say.
In tough times like the current LockDown we find ourselves in, we sometimes run out of ideas of what to make for brêkvis. No need to scratch your head anymore. As part of most households, basic groceries include cereals, porridge, milk, bread, eggs and some forms of side meats. With only these basic ingredients you can make a lekker hearty brêkvis everyday!
NB! There is no need to storm the shops to buy all the above. First use what you have in the cupboards! Sadly due to panic buying, a lot of fresh produce is not available. I couldn’t find honey or lemons so will be substituting with bottled lemon juice and make do with honey infused syrup. Make do with what you have and what is available when you have to make a run to the shops.
It needs repeating: do NOT go shopping unless it is absolutely necessary!
Here are a few ideas to help you with your planning for the remaining 2 weeks of the Lockdown.
Keep it fun and interesting! The kids can help too, a lekker family activity.
Start off the day with a lekker Rooibos tea with a small piece of ginger and a splash of lemon. This helps boost the immune system. If you are not used to eating ginger, start with very small pieces and gradually add it to cooked meals.
Cereals & porridge. Whether it is Weetbix, FruitLoops, Corn Flakes or instant porridge like Oats and ProNutro, it is a great way start to your day. Minimal effort, healthy and quick to prepare. Packed with nutrition and filling too. Planner Tip: When you have a braai, make extra braai pap without sauce and freeze portions. Simply heat, add sugar, butter and milk to your taste and you have a oldie but goodie for brêkvis! Ideal for chilly mornings.
Meusli, fruits & yoghurt. For those that are serious about health, this is a very smart way to start the day. Making Smoothies by adding milk to fruits and blending in a blender or even Brêkvis Bars using oats & honey either raw or baked. Top off with some seeds & nuts and voila! Or go for the classic meusli & yoghurt bowl. The options are endless! Search the internet for many ideas!
Flapjacks & pancakes. If you have cake flour, eggs, milk and oil (depending on recipe) then you can make a big batch of golden goodies! Spice it up with chocolate chip or blueberries. Serve with syrup, melted chocolate, fruits or even with some crispy bacon. Fill pancakes with fruits or go savoury and add a meaty filling.
A healthy alternative is mashing up 1 banana with 2 eggs. Depending on the sizes of the bananas & eggs, you can add more banana to get a thick pouring consistency and bake the same way as Flapjacks.
